This versatile condiment consists of crisp slices of red onions prepared agrodolce—in a sweet-sour brine made with red wine vinegar and sugar—then marinated in extra virgin olive oil.

Grown along Calabria’s Tyrrhenian coast for over two millennia, Tropea red onions are among the sweetest and most delicious you can find in nature. Their distinctive taste is attributed to the region’s unique terroir and proximity to the coast. The onions are sown during the summer, transplanted in autumn, and harvested the following spring. Giodà takes great care in preserving the onions, carrying out every step by hand—from cleaning to cutting to jarring—and using just a few simple ingredients.
