At IASA in Salerno, Campania, the whole fish is slowly steamed to preserve its moist tenderness and delicate flavor. It is astounding to watch the IASA team as they skillfully clean, break down, and fillet the fish with the utmost care, entirely by hand. The artisans select the most precious, compact fillets to hand-pack into glass jars and fill them with olive oil to preserve and enhance the tuna’s texture and taste.
